What makes a grinder espresso-capable
- Burrs. Blade grinders chop beans into dust and chunks. Espresso needs even grounds, and that takes burrs.
- Small steps at the fine end. Dialing in means changing the grind a little at a time. If one step turns a slow shot into a fast one, you cannot land in between. All three grinders here are listed for espresso and have fine steps.
- A way to repeat your dose. That can be a timer, or a kitchen scale that reads to a tenth of a gram. Our starting recipe is 18 grams of coffee in, about 36 grams of espresso out, in 25 to 30 seconds.

- CASABREWS CM5418 and De'Longhi Stilosa. Their listings do not say which basket type is in the box. If yours are pressurized, fresh grounds will still taste better than stale ones, but you will not get the full gain until you add a single wall basket in the right size.
